it’s that time again where we need a few side dishes to complete some meals this week. This Bacon Chive Potato Salad Recipe is one I have not shared but oh my try it! Not only is it delicious, I mean come on it has pickles in it, but my whole family LOVED it! So teenager and spouse approved I guess.
What will you need to make this Bacon Chive Potato Salad Recipe:
3-4 slices of cooked bacon chopped
4 cups cooked chopped potatoes
2 hard-boiled eggs chopped
1/2 cup shredded cheddar cheese
2 tablespoons minced chives
3/4 cup Cream Cheese or yogurt
3 tablespoons of mayo, I used Miracle Whip
2 teaspoon Dijon mustard
3 teaspoons dill pickle juice
2 minced dill pickles
Salt and pepper to taste
First, you need to chop and cook the potatoes. I threw my eggs in the same water to let boil. I also cooked my bacon and chopped it while the potatoes were boiling. When the bacon and potatoes are cooked, it’s time to make the salad. Add potatoes to a large bowl along with the chopped bacon, hard boiled eggs, shredded cheddar cheese, and chives. Mix well.
Next, add all of the other ingredients and combine. I felt this potato salad tasted the best served warm but many people place in the fridge to chill. It really comes to you personal taste. I also added some salt and pepper to taste if needed. This potato side dish packs a punch of flavors but it is so good!
