I had this delicious lemon cake at a Bed & Breakfast in Canandaigua, New York. Ever since I have been trying to recreate it because it was that good. Tell me I am not the only person who dreams of dessert they had while traveling? Seriously I would ask to sneak a few slices at lunch time after a full day of hiking it was THAT good. Well, friends this Moist Lemon Cake Dessert recipe is ready for you to try.
What you will need to make this Moist lemon Cake Dessert:
1 Stick of butter
1 1/4 cup Sugar
3 eggs
zest of 1 lemon
1/4 cup of sour cream
1/2 cup of flour
1 tsp. baking powder
1 tsp. salt
Lemon Glaze ( optional): 1/2 cup powder sugar and one lemon juiced.
Melt one stick of butter and add to a mixing bowl. Next add your salt, sugar, eggs, sour cream, lemon zest and baking powder. I used a hand mixer to get started and then gently whipped the flour it. I had heard if you mix for a bit it helps to aerate it and make your cake nice and fluffy. I am not sure of the chemical reaction but I can tell you my cake was pretty fluffy. Place in your oven to bake at 350 degrees for 1 hour.
While this moist lemon cake dessert was baking I made the glaze. I will say I prefer making my own glaze but please if you like frosting use that. A dollop of cool whip might be good as well.
