I personally love Cauliflower but my family is not as big of a fan as I am. I love to incorporate it for dinner when ever I can. Today, I am sharing my Cauliflower Alfredo Sauce Recipe. It was inspired because our local grocery stores seem to always be out of the regular alfredo sauce I usually buy, so making it at home it is!
What you will need to make Cauliflower Alfredo Sauce Recipe:
Few cloves of garlic
1/2-1 cup of milk or heavy whipping cream
Asparagus I used a half of an bundle
head of cauliflower- destemmed and chopped in easily mixing pieces
Salt and pepper to taste
Boneless chicken
3 tbs. of high quality olive oil for the sauce and another 1 tbs. to cook the chicken
Add to your frying pan oil, chicken and I also added some diced up green beans from our garden ( totally optional). Let the chicken sear on one side then flipped them over. Salt, pepper then lowered the temperature and cooked them all the way through ( no pink). I dice this up to mix in the sauce and pasta but it is truly up to you. Next, I add the chopped asparagus and let that cook for a little bit.
While the Chicken is cooking you can create your sauce. To a small sauce pan add the 3 tablespoons of Olive Oil and garlic cloves. I let then cook until they brown on each side. Then I take out our food processor and add the oil and cloves to it. Next add your milk, cauliflower, salt pepper to blend into a sauce consistency. If you want your sauce more liquid just add more milk.
Once your sauce is done, I add it to the chopped chicken mixture. I plate with the noodles on the bottom and sauce drizzled over top. This is a super easy way to make a healthier alfredo sauce. If you substituted the milk for Oat milk for example it could also be dairy-free.
