My garden was in in full swing at the start of Spring and it is still going ya’ll! I had so many tomatoes and zucchini we started giving them away. Today I wanted to share on way I did use up a few that were left behind. This Zucchini Chocolate Cake Recipe is easy and delicious. The frosting alone is worth a try!
What you will need to make this Zucchini Chocolate Cake Recipe:
1 stick of unsalted butter
1 cup of sugar
2 tbs of Olive oil
1-2 Small zucchini shredded
1/3 cup packed light brown sugar
3/4 cup plus, 2 tablespoons unsweetened cocoa powder
1/2 teaspoon vanilla extract
2 large eggs plus 1 egg yolk
1 1/2 cups all-purpose flour
1 tablespoon cornstarch
1/4 teaspoon salt
Preheat the oven to 350°F. Spray your baking pan with cooking spray.
Stir all wet ingredients including the zucchini, until very well combined. Add in the flour, cornstarch, salt and mix together evenly. Batter will be thick. Pour into the prepared pan and bake for 25 minutes.
Let cool completely in the pan before frosting. For the frosting I whipped 1/2 cup heavy cream with 1 cup of Coco powder and 1/2 cup of powdered sugar until it gave me the consistency I wanted (pictured above).
