What is easy to take in the morning for breakfast or a snack or just to have an on the go treat? Muffins! Sharing my breakfast banana-nut muffin recipe today. I sure do love banana bread but man having these muffins instead really makes those ripe bananas seem like we left them on purpose. Here is a secret I promise I only make these when we haven’t eaten our weekly bananas, ha. I am not fooling anyone, some weeks we devour them, other days they get froze and made into tasty treats.
What you will need to make this Banana Nut Muffin Recipe:
(This recipe makes 12 muffins)
1 Stick of unsalted butter
1 egg
2 ripe bananas
1/2 tsp. of vanilla extract
2/3 cup of yogurt ( I used Vanilla because it is what we have on hand)
1 cup of flour
1/2 tsp. baking soda
Cinnamon to taste optional
I also added 1/2 cup of chopped nuts, optional
To a mixing bowl add all of your ingredients. I hand mixed this but of course use what you have. Spray a cookie sheet unless you have a non-stick pan or use liners. Bake at 350 until the middle comes clean when tested with a tooth pick. Now I did find that the riper our bananas are they might take a tad longer to bake all the way through. Unlike dessert muffins these generally will not bake through by setting in the pan.
I serve with a little bit of melted butter but you eat them however you like. Toss a few in a Ziploc bag and you are good to go! Need more recipes like this Breakfast Banana-Nut Muffin Recipe?
