We have different variations of tortellini recipes in my Meal planning archives. I make it with different types or meats, tortellini pasta and sauces. This time we tried a three cheese tortellini I found in our local grocery store and man was it so good! This dish packs a ton of flavor and has SUPER easy steps to whip together.
What you will need to make this three cheese sausage tortellini recipe:
1 tablespoon olive oil
1-2 small diced onions
1 lb Italian sausage
2-3 cloves garlic, minced
1 can petite diced tomatoes
1 cup Half and Half
2 tablespoons all-purpose flour
9 ounces tortellini (fresh or frozen) I used fresh three cheese
salt and pepper to taste
2 cups fresh baby spinach, loosely packed
1/2 cup grated Parmesan cheese
Thinly slice garlic and onions and add to a deep frying pan with a drizzle of oil. Toss until fragrant, about 1 minute then season with salt and pepper. Next add sausage and cook until almost done. When it is almost fully cooked, mix in a bowl the flour to half and half.
In the frying pan add 1 can of tomatoes ( or freshly chopped ones), uncooked pasta and half and half mixture. Bring mixture to a boil, then lower heat and let simmer. Next add parmesan cheese and spinach to the frying pan.
Continue cooking until sauce thickens and tortellini are tender. Roughly this will take 5-7 minutes, stirring occasionally. We like to serve with extra parmesan cheese on top and fruit as a side.
