Who enjoys a old fashion cookie?? We were gifted some apricot jam and it has been sitting in my pantry just waiting to be used. Since I did a light Spring Cleaning of our pantry, I thought it was about time to use it. This Apricot Sugar Cookie recipe is super easy to make. You could easily substitute any jam you have and they will turn out great!
The Ingredients you will need to make this Apricot Sugar Cookie recipe:
1 cup All purpose Flour
1/2 cup Sugar
One egg
1/4 cup soft butter
1 teaspoon Baking Powder
A pinch of salt
5 tbsp Apricot jam
Optional powdered sugar for the top after baking
In a large bowl, add all ingredients except for jam and powdered sugar Combine all ingredients and blend all together- hands work best for this Form a dough ball and start with pieces of dough the size of a walnut You can make smaller if you wish but I wanted big cookies. Roll the piece between your palms and then flatten Do this until you have used all the dough. Then take the end of a utensil. I used the end of a spoon to make two indents in the dough resembling a heart (see pictured above). Add jam to fill your hearts. Bake at 350 degrees for 17 minutes. Remove from oven, let cool for 30 minutes then sprinkle with powdered sugar.
This sugar cookie recipe is so good you honestly could skip the jam part. I do love making these for a party we might be attending.
