Need a little something to go with your morning coffee? This Orange and Lemon Cake recipe is absolutely worth the 5 minutes it takes to prep. If you are not into the orange flavor you can substitute it for lemon zest and lemon juice. Once you make this I promise it will become a friend and family favorite!
You will need to make this Orange and Lemon Cake recipe:
1/2 cup avocado oil
1/2 cup sugar
1 teaspoon vanilla extract
1.5 teaspoons baking powder
zest of one large orange or 2 mandarin oranges ( I used Wonderful Halos)
1 fresh lemon juiced
1 cup all purpose flour
Juice of one large orange ( or two mandarin oranges)
Optional topping: Filtered powder sugar
Add the oil, sugar, eggs, and vanilla to bowl and mix. Next, add the orange zest, lemon juice and baking powder. Add the juiced orange liquid to 1/2 of your flour and mix. Then the other 1/2 of the flour, fully incorporated. Pour mixture into a loaf tin lined or buttered. I personally lined mine with parchment paper instead. Bake at 350F for 25-30 minutes until a toothpick comes out clean. After it comes out let set for 5-10 minutes then dust a light layer of powdered sugar.
