I just love baking desserts that take little to know effort or time to whip up. This Starbucks Copycat Iced Lemon Loaf is not only deliciously tangy but packed full of flavor. The sweet and zesty glaze throws this whole dessert over the top leaving anyone wanting seconds. I did have to make a few tweaks to perfect it and now we all enjoy it.
What you need to make this Starbucks Copycat Iced Lemon Loaf:
2 cups of flour
1 teaspoon of baking powder
1/2 teaspoon of baking soda
1/2 teaspoon of sea salt
Zest of 1 lemon
2/3 cup maple syrup
1/4 cup avocado oil
2/3 cup powdered sugar
1 lemon juiced
In a bowl, add lemon juice, to the powered sugar until you get a thick icing for your glaze. Keep 1/2 glaze for the top after it is baked. The other 1/2 of the glaze add to your mixture below. When I first made this I realized the zesty glaze needed to also be incorporated within the batter!
In a separate bowl mix together all of the loaf ingredients until smooth. Next, pour in a parchment lined loaf pan. Bake at 350F until a toothpick inserted in the center comes out clean. Mine took about 30-40 minutes to cook fully. It does rise a bit when baking so do not be alarmed by this. Slice and enjoy!
