In my line of work, I get sent items in the hopes I might mention them in my writings or on Social Media. In this particular case, I was gifted a box of Laird’s AppleJack products along with a recipe book. While scanning the pages, I found this AppleJack Normandy-Style Chicken recipe. It is easy to cook for dinner with a great flavor profile. Have to say I was pleasantly surprised and now we have it on our meal plan rotation. This was worth a share because the recipes in this book are worth the hype.
What you need to make this AppleJack Normandy-Style Chicken Recipe:
4 Chicken leg halves
Salt and Pepper
5 Tablespoons of butter
1 onion diced
1 clove of garlic, minced
1 cup of apple juice or apple cider
1/2 pound mushrooms sliced
2 tart apples, peeled, cored and diced
1/4 Cup of Laird’s AppleJack
Generously season both sides of your chicken with the salt and pepper. Melt 3 tablespoons of butter in a large skillet. Brown chicken on each side. Add garlic and onion, sauté. Pour in apple juice and bring to a boil. Lower heat to a simmer, cover and cook for another 15 minutes. Turn Chicken; add mushrooms and AppleJack. Cover and simmer for another 15 minutes or until chicken is fully cooked ( no longer pink in the middle). Plate the chicken and add the apples bits on top. I served this with a side salad and roasted garlic French beans.
