This Spinach Tomato Tortellini Recipe is perfect for those days you don’t want to spend all night in the kitchen. When I first made this for my family I was shocked how much they enjoyed it. What you will need for this Spinach Tomato Tortellini Recipe:
1 box of pasta ( Whatever pasta noodles you have on hand will work)
2 cloves of minced garlic
1 cup chopped fresh spinach
1 can of diced tomatoes
Salt & pepper to taste
1 small diced onion
2 tablespoons all-purpose flour
1 1/2 cups half-and-half
1/2 cup grated Parmesan cheese
While boiling your pasta, Place the minced garlic & onions into a skillet over medium heat until fragrant. Be careful not to burn them! Then add the petite diced tomatoes, the spinach, salt & pepper to the skillet and cook over medium high
heat until bubbling.
In a separate bowl whisk together the half and half and the flour.
Add the half and half/flour mixture to the skillet, along with the Parmesan cheese. Stir while cooking until everything is heated through
and thickening. Stir in the drained pasta. Serve and enjoy!
