In a search to eat a bit healthier and find new recipes we stumbled upon this tasty lunch sandwich. This dish was inspired by a meal we had thanks to Home Chef, called Korean BBQ Pulled Pork Sandwich with Cilantro-Lime Slaw. We made a few changes to our personal tastes, enjoy!

What you will need:
2 oz. Korean BBQ Sauce
8 oz. Slaw Mix
¼ oz. Cilantro
2 oz. Sliced Red Onion
½ oz. Crispy Rice Noodles
dollop of Miracle whip
2 French Rolls
8 oz. Pulled Pork
Make the Slaw and Prepare Ingredients Mince cilantro (no need to stem). Halve and juice lime. In a mixing bowl, combine slaw mix, cilantro, miracle whip, 2 tsp. lime juice, 1 tsp. olive oil, and a pinch of salt and pepper. Set aside.
Coarsely chop pulled pork. Excess pork fat will render while cooking and add flavor. Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add onion to hot pan and stir occasionally until softened and lightly browned, 3-5 minutes.
Add pork, BBQ sauce and 2 Tbsp. water to pan. Stir occasionally, breaking up pork with a spoon, until pork is warmed through and coated, 1-2 minutes (pictured above).
top the bottom half of your roll with pork and ready made slaw.
