Black Bean Avocado Dip Recipe

After our yearly intention to live healthier, I started researching all the great health benefits to avocados. I wanted to add them into our daily meals. I don’t know if you know this but I an avocado is a “fruit”.  

Some other fun facts:

 ♥ They contain less than 1 gram of sugar in a 1-oz. serving

♥ you can bake, fry, grill or eat them raw

♥ Avocados are cholesterol- and sodium-free, and more than 50 percent of the fruit’s fat content comes from monounsaturated fats.

What you will need:

5 Tablespoons Olive Oil
2 Tablespoons Apple Cider Vinegar
6 Tablespoons Lime juice
2 cans of Corn (I used a half bag of froze, thawed)
  2 Teaspoon Cumin
  Salt to taste
2 cans of Black Beans
3 medium sized Tomatoes, diced
1/2 Red Onion, diced
2 Tablespoons of Garlic, minced
1 cup of chopped Cilantro
1 Pepper, diced
1 Avocado, diced

Add olive oil, lime juice, apple cider vinegar, corn, cumin, and salt to a bowl, mix together. Chop up all of the veggies into small pieces and place into a separate bowl. When adding the black beans make sure to drain them. 

Add the two bowls together & mix.

Served best with scoop tortilla chips!
