Beech-Nut® Naturals really surprised me when they sent the party kit because they included a recipe card. I thought how odd? You can make Spice Apple Pumpkin Muffins using the baby food!! Many of you asked for the recipe so here it is.
What you will need:
2 jars of Beech-Nut® Naturals apple and pumpkin
1 cup firmly packed brown sugar
1/2 cup vegetable oil
1/3 cup milk
2 1/4 cup flour
1 1/2 tsp cinnamon
1/2 tsp ginger
1/2 tsp baking soda
1/2 tsp salt
1/4 tsp ground cloves
1/4 ground nutmeg
1/2 large granny smith apple peeled, chopped
1/2 cup pecans or walnuts
Preheat oven to 350. In a large bowl, whisk together sugar, Beech-Nut® Naturals apple and pumpkin, oil, milk and eggs until smooth. In a separate bowl, stir together flour, cinnamon, ginger, baking soda, cloves and nutmeg until combined. Stir flour mixture into Beech-Nut® Naturals mixture. Fold in apples. Divide evenly among prepared muffin cups. Smooth tops and sprinkle pecans.
Bake around 25 minutes or until cooked evenly. Transfer to cooling rack, serve and enjoy!
