We have been really trying to eat healthier!
What you will need:
⅗ oz. Butter
2 Carrots
2 Zucchini
2 tsp. Sweet Basil, Citrus, and Garlic Rub
12 oz. Salmon Fillets
½ fl. oz. Honey
Preheat oven to 400. Trim zucchini ends, halve lengthwise, and cut on an angle into ½” pieces. Chop carrots. Pat salmon fillets dry, and season flesh side with a pinch of salt and pepper.
Place a large non-stick pan over medium-high heat. Add 1 tsp. olive oil and salmon, skin side up, to hot pan. Sear on one side until golden brown, 2-4 minutes. Flip salmon, and transfer to prepared baking sheet. Roast in hot oven until salmon is firm and reaches a minimum internal temperature of 145 degrees, 7-10 minutes. I added the butter and honey on top as pictured above. While you can cook these separately I just cook the veggies with some olive oil placed on the same oven sheet.
This is a delicious dish for lunch or dinner.
