I had a similar cake recipe while down south. I have been trying to recreate it. I decided to create cupcakes for my son’s Halloween Party and they turned out great. These are perfect for any holiday not just Halloween.
What you will need:
2 Cups – All-purpose flour
3 Cups – Sugar
2 Tsp. – Baking Soda
2 – Eggs
1 (20oz) can of pineapple with juice
1 Cup Chopped Walnuts
1 cup shredded coconut
1 stick of butter
4 ozs. whipped cream cheese
1 cups confectioners’ sugar
1 tsp vanilla extract
Spray your oven pan we used a Cupcake tin. Preheat oven to 325. Mix flour, 2 cups sugar, baking soda, eggs, pineapples including the juice, coconut and walnuts until all ingredients are moist. Spoon mixture into prepared pan and bake for 35 to 40 minutes or until toothpick inserted in center of the cake comes out dry. When I first made these I turned my oven up to speed up the process and they were a complete mess. Slow and low heat are the trick with this recipe!
After pulling from the oven let them cool. To create the frosting: beat butter and cream cheese in a bowl until smooth. Then gradually add in 1 cup of sugar, the confectioners’ sugar and vanilla until smooth. Add water or milk for a soft consistency.
I topped them with candy corn but you could top them with anything really. Walnuts, other types of candies even sprinkles!
