I have gotten a few new things for my kitchen in the last week that I wanted to try out and use. First up I got some new Moore’s Marinades to play around with and create new recipes for our weekly meal plan.
Second, I got this amazing VitaClay Rice Cooker that has been all over my Social Media feeds and inter-webs. Along with some great products from Lundberg Family Farms to help create this recipe! I swear everyone has one of these and I might be the last to jump on the band wagon but so glad I did! This thing is pretty awesome and makes my busy Mom life super easy to manage!!
What you will need:
2 eggs ( I just cracked and whipped them in a bowl)
Pancko Bread crumbs
1 Cup flower
Boneless Chicken breast
Moore’s Buffalo sauce
Lundberg Family Farms Short Grain rice ( I love the flavoring of this)
Something to cook rice in, I used my VitaClay Rice Cooker
I added about half a cup of rice to my rice cooker and 1 cup water. I set it to cook brown rice and set it aside. I add some oil to a frying pan and turn on burner to MEDIUM. Then I got my ingredients ready to create the chicken portion of this recipe. I dunk chicken in the eggs, dunk in flour, dunk in breadcrumbs. I know some people re-dunk in the eggs but it never works and I end up with all my flour in the egg bowl. So, instead this is how I do it.
I place the chicken in the HOT oil and let fry. I usually wait until they are golden brown coloring half way up the chicken before flipping.
With the heat down this prevents the oil from splashing everywhere.
It also allows the chicken to cook all the way through.
Once the rice and chicken are done I plate.
First the rice with chicken laying on top.
I add the Moore’s Buffalo sauce and honey over it. This creates a balance of sweet and spicy. While I was traveling to Corning, N.Y. they did this with Chicken and Waffles. I am now addicted with combining honey and hot sauce!!
