Recipe: Southwest Pork Fajita

I just want to say first this recipe idea came from the Hello Fresh box we received. I have been cooking it up ever since and made a few tweaks of my own! Hope you enjoy it as much as we do.

What you will need:

1 Red Pepper (sliced)

1 small red onion (diced)

2 scallions (chopped)

1 lemon zest

1 roma tomato (diced)

1 can of sweet corn

1 package of pork chops

Soft tortilla shells

Add the diced red pepper, small red onion, scallions, lemon zest

 and tomatoes into frying pan. 

I said I changed the recipe a bit and here is where things get a little different. I add the lemon juice to this mixture along with olive oil to the frying pan. I just think it coats them with some flavor.

As these are cooking on low, I prepare the pork chops. I sliced them off and around the bone so they will fit in your tortilla once cooked.

I then simply add the pork to the frying pan.

Everyone enjoys this differently but we like our peppers to be on the not so soft side. So I keep the frying pan on low instead of turning it up!

Then just add the mixture to your shells!

This is such a different take on the Fajitas we are used too. 

I love this adaption and it is super easy to make for dinner on busy school nights.
