My Mom has been on diet kick for some time. She will not eat certain kinds of breads, pasta and it has me struggling to make her something she will enjoy! I finally found a great recipe she enjoys that has several of the things she loves mixed into one tasty dish!
The Salted Cod Lunch Bowl is easy to make here is what you will need:
1 Can of Bean ( We used the Back eyed version)
Sweet corn
Cilantro
Honey
Minced garlic
I was going to add salt but decided against it because this particular fish comes pre-salted!
Diced Tomatoes – I found a mix at my local grocery store

I washed my fish off before cutting it. They I sliced it into stripes and cooked in some oil and honey. Our personal palette does not like a large amount of salt so I sweetened it up with the honey. It gives a nice caramelized texture and flavor. After the fish has cooked I set aside and quickly warm the corn and beans. I personally like them drained and cooked.
I then mix all of th ingredients together n a bowl. At first I was going to toss some sour cream but we decided we liked the honey mustard option instead.
Again I love the idea of salty and sweet dishes and this just give it that extra touch of flavor! It is super easy to make and takes about ten minutes form start to finish (even if your fish if frozen)!
