Peppercorn Steak with Kale & Roasted Potatoes

 First off this is NOT my recipe. I got this from a Blue Apron box we enjoyed. If you are interested in this meal box enjoy my review here. I have since been making this meal so much I decided to share. It is an entire meal but so easy to make and VERY tasty! 

Peppercorn Steak with Kale & Roasted Potatoes

What you will need:

Steak 

Peppercorns, 

Mustard ( we enjoy honey Dijon!)

head of Kale

Garlic minced

2-3 tbs butter

Salt & Pepper

Potatoes

Parsley

Olive Oil

 First cut your potatoes and add them to a cookie sheet. Drizzle with olive oil, parsley flakes, salt and pepper. Add to the oven and let bake until golden brown. While those are baking move to your Kale.

 I add butter in a pan with garlic and let caramelize before I add the kale. Let cook until it starts to become a spinach consistency. I then place in the oven to bake. I enjoy a bit of crunch not so “mushy”. You do not have to do this, it is purely my personal taste.

 Next up focus on steak. I add some salt, pepper and olive oil to a pan. Let it warm up and then add your steak cut. I enjoy my steak rare (practically “Mooing”) but you can cook to your desired taste. 

 Once steak is cooked to your liking mix the mustard and peppercorns. 

I placed them on top instead of marinating it.

 This meal does not take long at all. If you do it in these steps your potatoes should be ready by the time your steak and kale have been cooked!
